Every year my brother has a big pig roast on Labor Day where all proceeds go to My House. My House is a non-profit organization that provides transitional housing and a home-like living environment for babies who are ready to leave the hospital but are homeless and have nowhere to go. The technical description of what they do is assuring that the medical and developmental needs of these babies are met- what they really do is love and care for children who need us. It’s absolutely incredible. Unfortunately, the funding for My House has drastically decreased and they are on the verge of closing. My mom and I volunteered here for 7 years and have seen the magic this place works. It’s absolutely remarkable. We are actually very close with two of the boys that were adopted from My House nearly 12 years ago. If you’re wondering how to donate, please click here.
Anyhow! I digress, this big pig roast is essentially a weekend of fun and festivities. I only have a very few pictures currently, but will surely post more as they come in! 🙂 The name changes every year, and this year I came up with “Silence of the Hams” BAHAHAHAHAH – I’m so funny. We have official shirts made, coozies given out, free beer, amazing food (we’re a family of foodies), dunk tank, water slides, etc. for all to enjoy. They only thing we ask anyone to do is donate what their heart desires. Sierra Nevada (beer) generously supplied the beer this year, Kroger gave some money, etc. etc. It’s pretty incredible.
The roast is on Sunday, but a crew of us start prepping Saturday. We stay up over night and sit by the spit and roast the pig. We ice the beer, set up the dunk tank, the water slide, made the food, etc. etc.
As I’ve said before – I bake. For realz bake. I made Pancake and Bacon Cupcakes! Each pancake cupcake was topped with two mini flapjacks and a piece of bacon and then drizzled with maple syrup and dusted with powdered sugar – all from scratch. iBake. Boom! This is just a crappy pic I took and will post good pics of them when the official pictures come out! The bottom right ones are blueberry oatmeal muffins I made from scratch, too (only 5PP!) All of them were gone by the end of the roast.
Here’s the pig being prepped on the left. It weighed about 125lbs in total. And here is the pig roasted on the right! We named her “Catherine” (the name of the character in the well in Silence of the Lambs. bahahaha) She slow roasted for about 18 hours with constant supervision. I stayed up until 3:30am on duty with my bestie and my sister in law. Slept and then got back up at 8am for a day of fun and prep!
I ate and drank my weight for sure. I’ll share more pics when I get them, but over 500 were taken! Wild! 🙂
