I’m on an oatmeal kick. I can’t get enough. I love making the old fashioned oats where I can really play with the flavors and recipe. I’m a Samoas Cookie freak. I don’t buy them because I’d eat them all. In one sitting. And all as in, all of the boxes ever made. So, I decided to do my best to recreate it. Here goes!
Now, I really don’t do the whole “sugar free” thing, but it’s what was in my fridge and worked, so I calculated the nutrition based on it. Also. I had sweetened coconut in my pantry, so that’s what I toasted. Also, I like my chocolate super dark, so you might want to add more stevia to your taste.
Thangs you will need for Samoas Oatmeal:
2 c. Unsweetened Coconut Almond Milk (USE THIS KIND – it has a coconut taste to it)
1 c. Old Fashioned Oats – NOT Quick Oats
1/4 c. dark unsweetened cocoa powder
pinch of salt
1tbsp stevia baking blend
2 tbsp toasted coconut
2 tbsp sugar free caramel
Toast your coconut in a pan over medium-high heat until it’s browning (not burning.)
Bring the coconut almond milk to a boil and stir in the oats, stevia, cocoa powder, and pinch of salt. Cook over medium heat for 5 minutes, stirring occassionally.
Top both bowls of oatmeal with 1 tbsp coconut and 1 tbsp caramel.
Makes 2 servings

Definitely going to try this! Samoas are my favorite Girl Scout cookie followed closely by thin mints!
I love oatmeal too, only, being the weirdo that I am, I hate eating it hot! I’m totally going to adapt this recipe to my favourite way to eat oats – refrigerator oatmeal!!! Thanks for sharing! 😍
I am a Girl Guide (Girl Scout) leader in Canada and we have only 2 types of cookies: Vanilla and chocolate sandwich cookies in the spring, and chocolate mint cookies in the fall. I’m intrigued by all of the US GS cookie variety!
